Owned by the Rebuelta González brothers, Hacienda La Parilla is a family estate just southeast of Jerez. Their collaboration with Les Caves de Pyrène draws from organic vineyards planted near Sierra de Cádiz. Winemaking remains simple and hands-off, indigenous yeasts, no filtering, minimal sulphur, embodying the pure essence of Palomino, unfettered.
