Aymeric and Marceline Beaufort run Domaine de l’Ocre Rouge on the quartz-rich red soils near Nîmes, farming Pinot Noir and Chardonnay organically.

Everything’s pressed in old wood, bottled unfiltered, and disgorged by hand. It’s total minimal intervention. You can taste it in La Perle: the swagger of Champagne, but none of the pretension.
