A vibrant, expressive cider crafted by Ripe Cider in Cornwall, using Yarlington Mill, Norwood, Browns, and Ellis Bitter apples hand-picked from regeneratively managed orchards on the south coast. Wild-fermented and aged on lees for 11 months in oak barrels, it then rests in bottle for a further 13 months before release.
Expect bright tropical fruit and fresh citrus up front, layered with subtle spice and a gentle saline lift. Made for the table, it shines alongside salty, savoury dishes, think roasted meats, rich mushroom plates, bold cheeses, and lightly spiced food.
