Coola Hills is a collaboration between Xavier Goodridge and Les Caves de Pyrene, built around great-value, low-intervention wines from Mount Gambier. The region sits close to the Southern Ocean, and multiple merchants point to the same combination of volcanic soils and cooling coastal influence as the reason the wine feels so bright and energetic.
