Bimbola
Light, fragrant and full of lift, this is a beautifully breezy white built around Malvasia’s perfume and Trebbiano’s freshness. Think white flowers, citrus peel and soft stone fruit, with a little herbal bitterness keeping things lively rather than pretty for the sake of it. It’s aromatic but not heavy, fresh but not razor-sharp, exactly the kind of white that disappears quickly once it’s open.
Camillo Donati’s family have been farming around Arola since 1930, with Camillo now running the estate alongside his wife and children. The philosophy is properly hands-off, no fermentation control, no thermal forcing and no chemical aids, just healthy fruit and spontaneous fermentation doing the work.
