Archil Guniava, Tsitska

An amber, skin-contact Tsitska from Western Georgia. Crisp apple, citrus peel, and a flicker of wild herbs, all wrapped in soft tannins and a tea-like finish. Fermented in a beeswax-lined qvevri with nothing added, nothing taken away.

Archil’s approach is quietly precise and transparently natural, hand-harvested fruit, spontaneous ferment over two weeks, and bottled without filtration, fining, or added sulphur.
