Fine-bubbled, bone-dry and seriously elegant, this is cider with Champagne-level intent but pure Devon soul. Bright orchard apple, lemon zest and a faint honeyed note glide into a crisp, mineral finish, while the long lees ageing brings a gentle, rounded texture without losing that razor-sharp freshness. It’s celebratory but grounded, brilliant with oysters, salty snacks or just good company.

Orchards & Method: Unsprayed traditional Devon orchards, wild ferment, bottle-fermented and aged on lees for around three years before disgorgement, minimal sulphur at bottling.
